  1. 1.5kg chicken drumsticks
  2. 2 onions, chopped
  3. 1 large tin tomato soup
  4. 1 tablespoon oil
  5. 2 crushed cloves of garlic
  6. 1/2 cup dry sherry
  7. 1/2 cup parsley

The instruction how to make Chicken Italienne by Matt Preston

  1. Pre-heat oven to 180C.
  2. Flour chicken drumsticks. Fry in a large pan until brown. Place in casserole dish and keep warm.
  3. In the same pan, fry onions and garlic until translucent.
  4. Add remaining ingredients and simmer for 5 minutes.
  5. Add chicken and cook for about 1 hour at 180C.
  6. Serve the drumsticks with some buttered risoni or orzo pasta.
